Perhaps my favourite weekend getaway is Noosa. A leisurely 2.5 hour drive from Brisbane. This was taken at sunset with a 10 stop ND filter, shutter open for 30 seconds (hence the blurry water).

One of my favourite cities in the world has been Tokyo. Weird and wacky things await around almost every corner. Here is a small collection of my favourite pictures from my travels to Tokyo over the last 2 or 3 years.

Salmon Sunday in the park

One of my favourite hobbies is cooking for my beloved friends. On this particular day a small group of my friends headed out to the local park on a Sunday afternoon, threw some frisbee and cooked some amazing salmon with some ice cold beers. Below is my recipe for Teriyaki Salmon, used on the day.

Teriyaki salmon recipe

Serves 4 people...

  • 1/4 cup soy sauce or tamari
  • 1/4 cup mirin
  • 2 tablespoons brown sugar
  • 1 tablespoon freshly grated ginger
  • 3 cloves garlic, minced
  • 1 green onion
  • 1 tablespoon of toasted seasame seeds
  • 4 salmon fillets with skin kept on

Finely chop 1 green onion. Add onion into a bowl and then add soy sauce, mirin, sugar and freshly grated ginger & garlic.
Combine well, then add salmon fillets to the marinade. Don't overpower the salmon. I recommend only marinating the salmon for roughly 1 - 2 hours before cooking.
Heat a frying pan or grill too medium heat. Depending on on the thickness of your fillets, cook each side for 4 minutes. Take off the heat and add toasted sesame seeds.
Rest for a couple of minutes before serving. Bon apetite!.
